I'm all about the mocktails at the moment. As you may or may not know, I had a baby boy back in October, and other than the occasional glass of wine (or prosecco) treat, I have been enjoying making smoothies and fresh spritzers or coolers.
During our little hot spell of weather a week or two ago, this was one of my favourite mixes...
Lemon Mint Coconut Cooler (serves 2)
- Half a lemon or lime
- 2 cups of coconut water
- 12 mint leaves
- 1/2 cup ice
- 1 tablespoon agave syrup
Method: Blend all ingredients together. Serve in one of our white enamel mugs with additional ice cubes, mint leaf and a wedge of lemon (or lime). TIP: Pop our enamel mugs in the freezer for 10 minutes before and they keep your drink extra chilled on a hot day.
This is so refreshing and coconut water is hydrating (good for when breastfeeding like me), and said to have antioxidant properties and a good source of B complex vitamins. You could make this with sugar instead of syrup but I prefer to avoid refined sugars (outside of my chocolate addiction that is)!
